Depends on the dish really! But I just made couscous with courgette and tomato for vegetables and I put them in a spice blend that has turmeric, coriander, paprika, cumin, ginger & cinnamon + some olive oil. But you really don’t need that many different spices to make a good marinade, for some noodle stir fries you’re already golden with some garlic, soy sauce and honey. In Italian dishes you could use thyme n rosemary. The longer u let them marinade the better they’ll taste but my time managemant is trash so I usually only manage an hour before I get too hungry lmao
